How are you all holding up? 🌻 We're healthy and safe, that's the most important thing!
Are we going a little stir crazy? You betcha, but oh well we'll survive. 🚲 Was supposed to start month 3 of my work out challenge, but you know what I just needed a mental health day. I'll start tomorrow or the next day if needed. Didn't even make Mason get all his school work done, he'll have to finish it tomorrow. We just needed a day to relax as much as possible in this crazy time we're in.

There are so many things I'm thankful for and one of those is the amount of nature areas Washington state has to offer. I'm so thankful we were able to get out and walk Nisqually Wildlife Perserve before the "Stay Home, stay healthy" order the Gov. placed. It was wonderful to get out one last time, this staying home is tough and I don't know how we're going to manage?!! #pnw #nature #optoutside #stayhome #momlife #sendwine

🌴On Saturday we took advantage of the sunshine and finally got out of the house! This will be a rough and trying time for our mental health, not going to lie. But we got to play at the local beach while practicing #socialdistancing it was wonderful! 🌻And we found a beautiful painted rock, thank you to who ever hid it!

Glad we were able to squeeze in one more trip out into the community and zoo before things start shutting down. Friday Piper and I made an impromptu visit to Pt defiance zoo! It was great minus the cold/rain; there was only a couple other people, animals were active, didnt need to touch anything. Now schools are out for 6 weeks and we plan on quarantining ourselves at home for most of that time, except to get out into nature.

On February 3 I started My Peak Challenge and happy to say I'm still going strong! I've been needing to make some lifestyle changes and get more active. I've been working to control what I eat, getting some kind of exercise in daily which I'm really enjoying. I didn't think I'd ever say that! 💚 #MPC2020 has truly started changing my life, I've had more positive thoughts and my body feels good. @mypeakchallenge

On February 3 I started...

Tuscan Herb French Bread – in the Bread Machine

Sharing is caring!

When it comes to food, what’s better than having fresh homemade bread? With a bread machine you can have it with very little work on your part, it takes you less than 5 minutes of your “time” and energy. No stirring, no kneading.

I love serving fresh bread with dinner, the aroma in the kitchen sets the tone for the evening! This Tuscan Herb French Bread makes the perfect addition to your dinner, it smells amazing and is full of flavor. You can easily find all the ingredients in your kitchen and no need for bread flour, because it uses all-purpose flour.

Are you new to making your own bread?

First step is to find a bread machine, whether you buy one or find one on your local Buy Nothing FB group(sadly people don’t tend to use there’s and it sits on the shelf). I am seeing a tread right now, with people making things at home because of the pandemic and empty shelves. If you can’t find one for free then I suggest buying one with multiple features and sizes like mine.

Second, find an easy recipe with limited effort on your part – like the Tuscan Herb French Bread recipe below.

Thirdly, find your “routine” – do you want fresh homemade bread with dinner tonight, then put your ingredients into your bread machine mid day or at least 3 1/2 hours before dinner.

Lastly, find the way you’ll store your bread if you aren’t able to eat it all. I’ve found ours stay fresh the longest in a large cloth bag inside a bread box or in a cupboard or pantry. But a ziplock bag or sealable container will do as well!

Tuscan Herb French Bread – Step by Step Instructions

Get your bread machine out and plug in.
In a small bowl stir your dried herbs* and olive oil together and set aside.
*If you’d like to use fresh herbs, use a mixture of two tablespoons a little heavier on the rosemary side.
Then pour the ingredients into the basket of the bread machine preferably in this order; Water, Salt, Sugar, Yeast*, Olive Oil mixture and then Flour.
*Most bread machines and instant yeast do not require you to set the yeast so be sure to read your manual and the back of the yeast. I know my bread machine does not and neither does the Instant Yeast I use.
Close the lid; set your machine to French setting, 1.5 lb loaf and light crust. Click start and you’ll have beautiful fresh flavorful bread in about 3 1/2 hours.
Using a bread machine is seriously SO easy, pour in all your ingredients and wait. Nothing else on your part.
When the bread is done, carefully remove it from the basket and let sit on counter for 5 min.
Slice and enjoy warm! Eat it plain, with butter, olive oil or a dip.
This bread would be great paired with; Meat Loaf, Stuffed Acorn Squash, German Beef Roulade, or Slow Cooker Meatballs.
