The Best Meat Loaf
It’s finally Fall here in Washington which means it’s time to turn on the oven and have some home-cooked meals. When I’m meal planning I love leaning towards meals you can prep ahead of time and aren’t complicated. I love Meat Loaf, but not just any kinda of meat loaf it actually needs to have a variety of flavors. It’s also one of those meals you can prepare ahead of time and let sit in your fridge until ready to cook and then you just place in the oven. If you have children, this recipe also has some vegetables hidden they may not notice!
To make your meatloaf, lightly grease a 5×9 inch loaf pan and preheat your oven to 350°. On a cutting board finely chop your onion, green pepper, garlic, parsley, shred carrot, shred cheese and toast your bread. Set aside. In a large bowl combine your ground sausage and ground beef(get at least 90% lean as the sausage will provide grease). You can either mix as you add stuff or do it after you add everything. (I add everything and then just mix with my hands.)
After you’ve added your ground beef and sausage add your garlic, parsley, ground pepper, salt and paprika.
Then add your green peppers, carrots, onions, egg and half of your cheese.
Again feel free to mix while you add ingredients or after. After your toast has cooled enough to touch crumble with your hands into the bowl.
Mix until everything is combined. (It may feel weird but it really helps to just do it with your hands, just make sure your hands are clean or wear gloves)
You are ready to place it in the greased loaf pan, spread evenly. Add your can of mushroom soup and spread evenly. Sprinkle the rest of your cheese on top and cover with foil.
Bake in a preheated oven for an hour with foil. Remove from oven take foil off and sprinkle crispy fried onions on top and place back in the oven for 15-20 minutes until fully cooked.
Let sit for 5 minutes and serve immediately. Enjoy!!

- 1 toast
- 1/2 cup cheddar cheese
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 tsp garlic powder or 1 fresh chopped garlic
- 1/2 tsp fresh chopped parsley
- 1 can condensed mushroom soup
- 1/2 cup crispy fried onions
Notes
