Are we going a little stir crazy? You betcha, but oh well we'll survive. 🚲 Was supposed to start month 3 of my work out challenge, but you know what I just needed a mental health day. I'll start tomorrow or the next day if needed. Didn't even make Mason get all his school work done, he'll have to finish it tomorrow. We just needed a day to relax as much as possible in this crazy time we're in.

There are so many things I'm thankful for and one of those is the amount of nature areas Washington state has to offer. I'm so thankful we were able to get out and walk Nisqually Wildlife Perserve before the "Stay Home, stay healthy" order the Gov. placed. It was wonderful to get out one last time, this staying home is tough and I don't know how we're going to manage?!! #pnw #nature #optoutside #stayhome #momlife #sendwine

🌴On Saturday we took advantage of the sunshine and finally got out of the house! This will be a rough and trying time for our mental health, not going to lie. But we got to play at the local beach while practicing #socialdistancing it was wonderful! 🌻And we found a beautiful painted rock, thank you to who ever hid it!

Glad we were able to squeeze in one more trip out into the community and zoo before things start shutting down. Friday Piper and I made an impromptu visit to Pt defiance zoo! It was great minus the cold/rain; there was only a couple other people, animals were active, didnt need to touch anything. Now schools are out for 6 weeks and we plan on quarantining ourselves at home for most of that time, except to get out into nature.

On February 3 I started My Peak Challenge and happy to say I'm still going strong! I've been needing to make some lifestyle changes and get more active. I've been working to control what I eat, getting some kind of exercise  in daily which I'm really enjoying. English Muffin Bread in Bread Machine

Nothing better than homemade bread! I’m loving trying new recipes, especially when they turn out amazing! This English Muffin Bread taste great, even better toasted, and easy to make. It’s a great alternative if you like English muffins but don’t have the skill or time to do the kneading, rolling and cutting. If you also love homemade bread but don’t necessarily have the skill or time to make it, I highly suggest purchasing a bread machine.

If you’ve never made bread in a bread machine, it’s seriously as easy as tying your shoes. Most recipes you just throw your ingredients in the bucket of the machine, close the lid and push a couple buttons and walk away. Come back usually around 3 hours later to fresh bread!

 

Let’s make fresh English Muffin Bread!

Place all ingredients into your bread machine. The amount of water you use depends on the time of year; use the smaller amount of water in the summer, or during humid conditions; use the larger amount of water in winter, or if you’re in a dry climate.

Set your machine for basic white bread, light crust, 1.5 lb loaf. Check the dough halfway through the second kneading cycle; it should be soft, smooth and slightly sticky. Adjust the dough’s consistency with additional flour or water, if needed.

This step is optional as it taste amazing without doing the cornmeal. If you want a true English muffin effect, remove the dough after either the final kneading or before the final rise and roll it in cornmeal. Place the dough back in the machine to rise and bake.

When the bread is finished, remove it from the machine, and place to cool on a rack. Either toast it or no toasting, either way taste amazing and everyone will love. My oldest perfects this recipe over any recipe I’ve tried so far. Works great as sandwich bread, toasted with butter and jam, or however you’d like to eat it. English Muffin Bread in Bread Machine

Love homemade English Muffins but don't have the time or skill to make them. This is a great alternative, tastes amazing and very easy to make.

Ingredients

  • 1 tsp vinegar
  • 1/4 to 1/3 cup water
  • 1 cup lukewarm milk
  • 2 Tbsp vegetable oil
  • 1 1/2 tsp salt
  • 1 1/2 tsp sugar
  • 1/2 tsp baking powder
  • 2 1/4 tsp instant yeast
  • 3 1/2 cup all-purpose flour

Instructions
