Zuppa Toscana Soup
When the days are shorter, the chill is in the air, it’s the perfect time for soups. And soup season is one of my favorite times, you get a hearty meal and usually it’s all made in one pot!
Now if you have a teenager, I’m sure you get the same response in our house “not another soup”. Good news is, this soup is a winner for all, including those teens.
Zuppa Toscana is a hearty, savory, creamy Italian soup full of sausage, kale, and potatoes. It’s a favorite in our house!

I love soup; they are usually filled with delicious flavors, warm you up on a cold day, and they are so simple to make.
This Zuppa Toscana Soup is no different. It’s hearty, full of flavors, and creamy. It’s packed with sausage and vegetables. Perfect for that chilly day.
It’s one of those one pot meals, and taste just as good as leftovers the next day. It’s also easy to make, and it doesn’t take long.
Can’t or shouldn’t have dairy, like me? Yes, you can substitute the dairy ingredients for dairy free options and it still turns out amazing.
Butter= olive oil or coconut oil
Heavy whipping cream= coconut milk
Parmesan cheese= either opt out or choose a dairy free option

Like I mentioned I LOVE SOUP SEASON! It’s a great way to get vegetables into my families bellies, quick hearty meal, and most of the time they’re one pot meals so clean up is a breeze. Here’s a few of my must have items for soup season:
- Dutch Oven
- Wooden Ladle
- Crockpot
- Good soup bowls
- Immersion blender
- Grater
- Vegetable Peeler
- Cutting board and a good knife

Zuppa Toscana Soup
Ingredients
- 1 lb Italian sausage
- 4 tbsp butter
- 1/2 yellow onion diced
- 4 garlic cloves minced
- 4-5 yellow potatoes cut into 1 inch pieces
- 2 cups water
- 6 cups chicken broth
- 2 tsp salt
- 1 tsp ground pepper
- 2 cups heavy whipping cream
- 4 cups kale chopped
- 4 pieces cooked bacon
- parmesan cheese to top optional
Instructions
- In a large pot(my favorite is a dutch oven) sauté sausage until browned, about 5-6 minutes. Transfer to a plate or bowl and set aside.
- In same pot, over medium heat, sauté butter and onions until translucent about 3-4 minutes. Then add garlic for another minute.
- Then add your potatoes, water, chicken broth, salt, pepper and bring to a boil. Once potatoes are tender, add heavy cream, kale, and sausage.
- Serve immediately, and garnish with bacon and/or parmesan cheese.
