Every kitchen should be equipped with an Instant Pot(or at least a crock pot), it’s makes cooking dinner so easy. They both have their advantages, a crock pot you make the meal in the morning and leave it and the instant pot you can use the same pot to make the entire meal with so many different ways to cook like pressure cook something.

We love this Taco Soup, it’s the perfect meal for a cold night. It’s easy, healthy, budget friendly and delicious! Garnish it with whatever you’d like; chips, cilantro, lime, cheese, sour cream, ect.

Plug your instant pot in, spray the bottom with cooking spray, set to saute and throw in your chopped onions and ground beef.

After you’ve browned your ground beef add all your ingredients; corn, stewed tomatoes, beans, green chilies, and seasoning. Mix all your ingredients, close the lid and turn the valve to sealing. Pressure cook on low for 30 minutes. 

Let it release the pressure naturally or wait 10 minutes and carefully switch the valve to venting. Scoop into bowls and garnish with toppings of choice and enjoy!

Instant Pot Taco Soup

Ingredients

  • 1 lb ground beef
  • 1 large onion
  • 2 cans mexican stewed tomatoes undrained
  • 1 can pinto beans undrained
  • 1 small can diced green chilies undrained
  • 1/2 cup canned corn drained
  • 1 Tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper

Notes
