Graham Cracker Cookies
When I think about a cheesecake, sure the cream cheese part is amazingly delicious but I especially love the graham cracker crust. It’s flaky, butter, sweet, crunchy and pretty much melts in my mouth. When I saw a recipe for graham cracker cookies in my Grandma-in-law’s recipe book I just knew I had to make them. They tasted even better than cheesecake crust; sweet, crunchy and buttery. One of the simplest cookies I’ve ever made, although not at all healthy they are oh so delicious!
Enjoy with your coffee/tea, in ice cream or just plain!
Whether you’re new to baking or seasoned, this recipe is perfect for everyone. It taste amazing and is so easy to make. This would be a perfect cookie to make with the kids. And chances are you probably have all the ingredients in your pantry.
Let’s get to baking
Preheat your oven to 325Β° and line the cookie sheet with 12 double graham crackers. Place them together touching.
In a small sauce pan, bring your butter and sugar to a rolling boil and boil for 2 minutes.
Remove your pan(turn the stove off) and pour the butter sugar mixture over graham crackers evenly. Sprinkle with chopped walnuts if you wish. Bake for no more than 8 minutes at 325Β°, they will harden up outside of the oven.
Let cookies cool completely on the pan before removing and serving them. Again, they will harden up sitting outside of the oven. Hope you enjoy them as much as my family does! And don’t forget to try them in ice cream and with your coffee!

- 12 graham crackers double
- 3/4 cup unsalted butter
- 3/4 cup granulated sugar
- chopped walnuts optional
Instructions
- Preheat oven to 325 degrees.
- In a small sauce pan melt butter and sugar, once it's bubbling boil for 2 minutes.
- Meanwhile line cookie sheet with 12 double graham crackers, place together touching.
- Evenly pour butter sugar mixture over graham crackers and if you would like to sprinkle with chopped walnuts.
- Bake for only 8 minutes at 325 degrees. Let cookies cool completely on pan before removing and eating them.
