Instructions

- In a large bowl mix sugar, melted butter, and vanilla together until well blended. In a separate bowl combine flour, cocoa, baking soda, and salt together. Then slowly stir it into the sugar/butter mixture. The batter will look very dry at first—don’t panic!
- Fold in the shredded zucchini. After a minute or two of stirring, the moisture from the zucchini will transform the batter into a thick brownie mixture.Fold in the chocolate chips.
- Spread evenly into your prepared baking dish. Bake in preheated oven until edges have started to pull away from the sides of the pan and a toothpick inserted in the center comes out with a few moist crumbs, about 30 to 35 minutes. Let cool, about 20 minutes. Serve & enjoy!
