Taco Pasta
Why not switch things up a little on Taco Tuesday? Tacos are great and all but sometimes it is nice to change it up a bit and still keep the theme for the night. I love making easy meals, and I’m talking everything needs to be easy; clean up, prep, cooking and it done at the same time. This Taco Pasta is very simple to make, and definitely a crowd pleaser. This dish is great for the whole family and only spicy if you want it to be, you can add chopped jalapenos to only your bowl.

Cook noodles according to package and then strain when done. While noodles are cooking. Chop vegetables, and in a small bowl mix chili powder, cumin, paprika, onion powder, garlic powder, salt, oregano, cayenne pepper and black pepper together.
In a large frying pan over medium high heat brown ground beef for about 7-10 minutes.
Add vegetable oil, onions, tomatoes, green peppers to the pan with meat and cook for another 3-5 or until tender. Add tomato sauce, lime juice and seasoning, stir and cook for 3-4 more minutes and remove from heat.
Preheat oven to 375 degrees. Mix meat mixture in with the noodles and place into a large casserole dish. Sprinkle cheddar cheese on top and bake for 15 minutes.
Let sit for 5 minutes and then dish up. Garnish with cilantro and/or jalapeno.

- 16 oz elbow macaroni
- 1 lb ground beef
- 1/2 cup green bell peppers chopped
- 1 cup onions chopped
- 2 medium sized tomatoes chopped
- 1 juice of one lime
- 1 cup tomato sauce
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp onion powder
- 1/2 tsp oregano
- 1/2 tsp black pepper
- 1 Tbsp vegetable oil
- 1 cup cheddar cheese
- jalapeno garnish, optional
- cilantro garnish, optional
