One Pot Tex Mex Bake
In my house, I’m always creating something in the kitchen. Whether it’s some sort of dessert, loaf of bread, or a delicious dinner. I love cooking! It’s a form of stress reliever for me, fills the house with a beautiful aroma, and there’s almost always a reward at the end.
I especially love cooking dinner; a time to unwind from the day, enjoy my families company while we fill our bellies with wholesome foods.
A couple months back I bought myself a dutch oven and I’ve been loving it. It’s great for making one pot meals like this Tex Mex Bake that my family loves having for dinner.
Tex Mex Bake Instructions
To get started, preheat your oven to 400° F. In your dutch oven cook ground beef, onion, bell pepper, cumin and salt until ground beef is cooked through and onions are translucent.
Add the black beans, salsa and corn to ground beef mixture. Cook for 10 additional minutes, while stirring.
Prepare corn bread mix according to package directions in a small bowl. Sprinkle shredded cheese over ground beef mixture and then spread corn bread mixture evenly on top.
Bake for 20-25 minutes or until the corn bread is cooked through and golden on top.
Serve immediately!
It also taste amazing with sour cream, more cheese or avocados on top.
*If you don’t have a dutch oven, use a skillet on the stove and then transfer to a baking dish for the oven.
