Healthy Granola Bars
I’ve been trying to get my family to eat more healthy and sometimes I have to “sneak” ingredients in. The guys don’t always choose healthy. One thing I’ve always wanted to try making is granola bars but I always thought they’d be too difficult to make. I’m becoming more confident in the kitchen so I decided to give them a try. What could go wrong, right!
Well, the granola bars turned out amazing! No, not everyone particularly cared for them and preferred the ones with preservatives. In all fairness we’re talking about the same people who “don’t always choose healthy” haha. Everyone else that tried them thought they were very good; full of flavor and healthy foods. They’d make the perfect snack or breakfast food. They do crumble easily though so I’d keep them as cold as possible but if you left out the chocolate drizzle(or not) they’d be the perfect granola for your yogurt.
They are so easy to make so if you’re feeling the way I did and not confident in making them, get rid of that thought and just do it! You’ll be surprised in how easy they are to make. They are full of healthy foods like chia seeds, flaxseed, and coconut! I don’t feel bad if I can’t stop eating them and neither should you!
In a medium sized pot over medium high heat stir the peanut butter, honey, coconut oil, vanilla extract, and cinnamon until combined. This step should only take about 5-7 minutes.
Remove the pot from heat and stir in flaxseed, chia seed, oats, almonds and coconut flakes.
Line a loaf pan with parchment paper and spread the granola mixture evenly in the pan.
Melt coconut oil and chocolate chips in the microwave. Drizzle over granola bars and set the pan into the fridge for 30-45 minutes.
Remove the granola bars from the fridge and take out of the loaf pan. Chop into 7 bars with a sharp knife. Store the granola bars in the fridge, either in a container or individually wrapped.
Hope you enjoy them as much I do, remember to keep them chilled. They make the perfect food for a snack or breakfast!
*I buy the flaxseed whole and then grind them up in a coffee grinder.
*If you want to replace the almonds for another nut, just make sure they are crushed or sliced.

- 3 Tbsp honey
- 1 1/2 Tbsp virgin coconut oil
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/3 cup ground flaxseed
- 1 Tbsp chia seeds
- 1/2 cup old fashioned rolled oats
- 1/3 cup sliced almonds
- 1/4 cup unsweetened coconut flakes
Topping
- 2 Tbsp dark chocolate chips
- 1/2 tsp coconut oil
Instructions
