The Best Meat Loaf
This meat loaf recipe is full of flavor, has hidden veggies, it's perfect for these cold fall and winter nights.

- 1 lb ground beef
- 1 lb ground sausage
- 1/3 cup green peppers
- 1/3 cup carrots
- 1/2 cup onions
- 1 egg
- 1 toast
- 1/2 cup cheddar cheese
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 tsp garlic powder or 1 fresh chopped garlic
- 1/2 tsp fresh chopped parsley
- 1 can condensed mushroom soup
- 1/2 cup crispy fried onions
- Lightly grease a 5x9 inch loaf pan and preheat your oven to 350°.
- On a cutting board finely chop your onion, green pepper, garlic, parsley, shred carrot, shred cheese and toast your bread. Set aside.
- In a large bowl combine your ground sausage and ground beef(get at least 90% lean as the sausage will provide grease). Add your garlic, parsley, ground pepper, salt, paprika, green peppers, carrots, onions, egg and half of your cheese. Crumble your toast into the bowl.
- Mix until everything is combined.
- Place mixture in the greased loaf pan, spread evenly. Add your can of mushroom soup and spread evenly. Sprinkle the rest of your cheese on top and cover with foil.
- Bake in a preheated oven for an hour with foil. Remove from oven take foil off and sprinkle crispy fried onions on top and place back in the oven for 15-20 minutes until fully cooked. When it reaches an internal temperature of 160°F.
- Let sit for 5 minutes and serve immediately.
