An easy batter recipe for delicious and fluffy waffles (or pancakes) using sourdough discard. These can be made right away, with only a 20 minute rest time.

My family and I love breakfast items, we will occasionally have breakfast for dinner. It was always a fun memory when I was growing up, so I hope to instill those same memories with my kids.
Waffles are such a great breakfast item; whether you drizzle syrup on it, or strawberries and whipped cream. My favorite lately is peanut butter and syrup. They are always a hit.
These Sourdough Waffles step it up a notch! Sourdough is great for your gut health and is a prebiotic.
These waffles are very tasty, and fluffy with a little crisp.
What’s sourdough discard?
Sourdough discard is the portion of the starter that is removed before you feed it again. You either just toss it into the trash, or can use it in a recipe. Sourdough discard can be added to almost any baked good.
If you don’t have a sourdough start, don’t be intimidated. Once you’ve activated it, you can easily stored in the fridge for feeding/using once a week, if you don’t want to deal with it every day.

Sourdough Waffles Or Pancakes
Equipment
- Mixing Bowl
- Waffle Iron or Pan
Ingredients
- 3/4 cup sourdough starter discard
- 1 cup milk or buttermilk
- 2 cups all-purpose flour
- 3 Tbps granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 4 Tbsp vegetable oil or melted butter
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
Instructions
- In a large mixing bowl, mix all the ingredients togethers until combined. Allow the batter to rest for 20 minutes at room temperature.
- Preheat your waffle iron or pan.
- Lightly grease your iron or pan. For waffles: pour 3/4 cup of batter into the center of the iron and cook until golden brown. For pancakes: pour 1/2 cup of batter into the center of the pan. Cook until the bottom is golden brown(watch for bubbles), flip and cook until the pancake is cooked through.
- Makes about 4 waffles or 8 pancakes.
