Sourdough Waffles Or Pancakes
An easy batter recipe for delicious and fluffy waffles (or pancakes) using sourdough discard. These can be made right away, with only a 20 minute rest time.

Mixing Bowl
Waffle Iron or Pan
- 3/4 cup sourdough starter discard
- 1 cup milk or buttermilk
- 2 cups all-purpose flour
- 3 Tbps granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 4 Tbsp vegetable oil or melted butter
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
In a large mixing bowl, mix all the ingredients togethers until combined. Allow the batter to rest for 20 minutes at room temperature.
Preheat your waffle iron or pan.
Lightly grease your iron or pan. For waffles: pour 3/4 cup of batter into the center of the iron and cook until golden brown. For pancakes: pour 1/2 cup of batter into the center of the pan. Cook until the bottom is golden brown(watch for bubbles), flip and cook until the pancake is cooked through.
Makes about 4 waffles or 8 pancakes.
