Tex Mex Bake

This one pot Texas-Mexican bake is delicious and easy to make.

  • 1 lb ground beef
  • 1 medium onion diced
  • 1 green bell pepper seeded and diced
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 cup salsa
  • 1/2 cup canned black beans drained
  • 1 15.25 can of corn drained
  • 1/2-1 cup shredded cheese
  • 1 8 oz corn bread mix


  • Preheat the oven to 400° F.
  • In a dutch oven cook ground beef, onion, bell pepper, cumin and salt until ground beef is cooked through and onions are translucent.
  • Add the black beans, salsa and corn to ground beef mixture. Cook for 10 additional minutes, while stirring.
  • Prepare corn bread mix according to package directions in a small bowl. Sprinkle shredded cheese over ground beef mixture and then spread corn bread mixture evenly on top.
  • Bake for 20-25 minutes or until the corn bread is cooked through and golden on top.
