Tex Mex Bake
This one pot Texas-Mexican bake is delicious and easy to make.
- 1 lb ground beef
- 1 medium onion diced
- 1 green bell pepper seeded and diced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 cup salsa
- 1/2 cup canned black beans drained
- 1 15.25 can of corn drained
- 1/2-1 cup shredded cheese
- 1 8 oz corn bread mix
Preheat the oven to 400° F.
In a dutch oven cook ground beef, onion, bell pepper, cumin and salt until ground beef is cooked through and onions are translucent.
Add the black beans, salsa and corn to ground beef mixture. Cook for 10 additional minutes, while stirring.
Prepare corn bread mix according to package directions in a small bowl. Sprinkle shredded cheese over ground beef mixture and then spread corn bread mixture evenly on top.
Bake for 20-25 minutes or until the corn bread is cooked through and golden on top.
