Cook noodles according to package and then strain when done.
While noodles are cooking. Chop vegetables, and in a small bowl mix chili powder, cumin, paprika, onion powder, garlic powder, salt, oregano, cayenne pepper and black pepper together.
In a large frying pan over medium high heat brown ground beef for about 7-10 minutes.
Add vegetable oil, onions, tomatoes, green peppers to the pan with meat and cook for another 3-5 or until tender. Add tomato sauce, lime juice and seasoning, stir and cook for 3-4 more minutes and remove from heat.
Preheat oven to 375 degrees. Mix meat mixture in with the noodles and place into a large casserole dish. Sprinkle cheddar cheese on top and bake for 15 minutes. Garnish with cilantro and/or jalapeno.
