Are we going a little stir crazy? You betcha, but oh well we'll survive. 🚲 Was supposed to start month 3 of my work out challenge, but you know what I just needed a mental health day. I'll start tomorrow or the next day if needed. Didn't even make Mason get all his school work done, he'll have to finish it tomorrow. We just needed a day to relax as much as possible in this crazy time we're in.

There are so many things I'm thankful for and one of those is the amount of nature areas Washington state has to offer. I'm so thankful we were able to get out and walk Nisqually Wildlife Perserve before the "Stay Home, stay healthy" order the Gov. placed. It was wonderful to get out one last time, this staying home is tough and I don't know how we're going to manage?!! #pnw #nature #optoutside #stayhome #momlife #sendwine

🌴On Saturday we took advantage of the sunshine and finally got out of the house! This will be a rough and trying time for our mental health, not going to lie. But we got to play at the local beach while practicing #socialdistancing it was wonderful! 🌻And we found a beautiful painted rock, thank you to who ever hid it!

Glad we were able to squeeze in one more trip out into the community and zoo before things start shutting down. Friday Piper and I made an impromptu visit to Pt defiance zoo! It was great minus the cold/rain; there was only a couple other people, animals were active, didnt need to touch anything. Now schools are out for 6 weeks and we plan on quarantining ourselves at home for most of that time, except to get out into nature.

On February 3 I started My Peak Challenge and happy to say I'm still going strong! I've been needing to make some lifestyle changes and get more active. I've been working to control what I eat, getting some kind of exercise  in daily which I'm really enjoying. The Best Baked Potatoes

Potatoes are a staple food in many households, including my own – we have potatoes 2-3 times a week. I’m no nutritionist but I do know that potatoes can be healthy for us if cooked and consumed properly and of course in moderation. Our go-to for potatoes is always this baked potato recipe below; it’s healthy, easy and taste amazing!

When preparing potatoes, they will always be healthier if they aren’t fried or microwaved. Which leads to baking or grilling, which isn’t convenient and quick but so much healthier. This recipe only calls for potatoes, sea salt, pepper and olive oil – no need for butter, cream or cheese.

Best Baked Potatoes – Step by Step Instructions

Turn on your oven to 350°F.

Grab a size appropriate baking dish and drizzle or spray olive oil on the bottom. Wash and cut your potatoes in half and place face down onto the olive oiled pan.

Drizzle or spray each potato with more olive oil, then sprinkle with sea salt and ground pepper over the potatoes.
Place the dish into the preheated oven and bake for 30-45 minutes, until the fork goes in easily.

Serve warm.

These potatoes will just melt in your mouth, hope you enjoy them as much as my family does!

These would be a great side with Meat Loaf, German Beef Roulade, Turkish Chicken and/or Steak Marinade!

*Yukon or red potatoes are the best choice for this recipe, but any will do. You want to make 1-2 small potatoes per person, depending on the appetite of the person.

* To Grill them: grab foil, spray with olive oil and either half the pieces or keep them full. Spray with more olive oil, sprinkle with sea salt and pepper. Wrap with foil and place in a preheated grill and cook for 45-60 minutes.
